Rooibos Teas - South African Herbal "Red" Tea
Rooibos is a herb that contains no caffeine. Rooibos drinkers
have claimed it has a soothing effect on headaches, disturbed sleeping patterns
& digestive problems.
The story of Rooibos starts around the turn of the last century in South
Africa’s beautiful Cedarberg region. It was the locals of the area who first
discovered that the fine needle like leaves of the wild “Aspalathus Linearis”
plant made a tasty aromatic tea. It was they who first harvested the plants,
chopped them with axes and bruised them with hammers leaving them to ferment
before drying in the sun. Rooibos seeds are planted in February and March and
tended for 18 months after which they are harvested. Cut Rooibos is bound and
milled to a uniform length then bruised between rollers to trigger the
fermentation process, which results in the characteristic flavor and sweet
aroma.

Most of us don’t give them much thought. Not so Nobel Prize
winning Chilean poet Pablo Neruda.
In his poem “Ode to a Lemon”, he
describes the juice of the fruit,

We couldn’t have said it better ourselves. The juice of lemons is at
once sour, piquant and as it was so eloquently put, intense. So what do
you think we do when we encounter a fruit with a flavor profile as
complex and powerful as that of the lemon? We blend it into a tea of
course! These times we’ve taken the natural essence of sun kissed lemons
and blend it with a pure South African Cederberg Rooibos. The result is
a caffeine free delight. The cup presents lemons, exceptionally smooth
Rooibos tones wonderfully offset by the tart citrus edge of the fruit.
Were Pablo Neruda alive today there is no doubt he would have composed a
poem about this tea. It may have gone something like this:

INFORMATION: Although Earl Grey is normally
associated with England and good strong Ceylon and Chinese teas, this
unique variety is closely tied to South Africa, in particular the town
of Howick. The reason for this is two fold. For one, the Rooibos
that forms the base of this blend is grown near the town. The second is
that the town is named after Earl Grey himself. In fact, History tells
us that Henry George Grey, the 3rd Earl of Grey was also known as
British Colonial Secretary Viscount Howick. Howick lent his name
to the new town as it was being formed near the Mgeni River in KwaZulu
Natal back in the 1800’s. The town developed as European settlers moved
to the country and began to populate the more remote corners of the
territory.
Howick accommodated the needs of the droves of
settlers and wagon-drivers that crossed the river as they went looking
for farmland. The weary travelers would stop for refreshment, supplies
and a well needed break from the trail.
It seems fitting that this tea share its name with a man whose name – or
one of them at least - became synonymous with repose and refreshment.
Interestingly it was Howick, the 3rd Earl of Grey who first conceived of
the idea of allowing free trade between England and her colonies. Like
all great Earl Grey teas, this tea is flavored with all natural Bergamot
oil. Brew yourself a pot and note how well the citrus character engages
with the mellow herbal character of the Rooibos. The taste is truly
sublime. Long live the Viscount! I mean Earl. I mean 3rd Earl of Grey!

INFORMATION: Like the spicy heat of cinnamon?
People have been enjoying it throughout the world for millennia.
Interestingly however, the spice was originally appreciated more for its
sweet scent than its flavor. Biblical references to cinnamon indicate
that it was used as an ingredient in the preparation of the anointing
oils favored by Moses. In ancient Rome, mourners used cinnamon to mask
the smell of funeral pyres – in fact in 65 AD Emperor Nero burned a
year’s supply on the pyre of his wife Poppaea. By the Middle Ages
Europeans had come to appreciate the way it tasted and cinnamon found
its place on the tabletops of wealthier households throughout the
continent. Suffice it to say, the history of cinnamon has many chapters.
We’ve decided to write the next chapter in the
history of the spice by creating Le Marché Spice Rooibos. Starting with
a top quality Cederberg Rooibos, we’ve blended in some spicy cinnamon
for a mouth tingling zip. Next, we’ve balanced out the wonderful
cinnamon notes by adding of hibiscus, almond for a slightly bitter note,
apple for added body and subtle hints of rosehip. Like all Rooibos
blends, Le Marché Spice is caffeine free and can be enjoyed at any time
of day. Try it steaming hot or poured over ice for a summer treat. We’re

INFORMATION: This amazing blend of Rooibos and
fresh strawberries was inspired by a visit to the pick-your-own berry
farm outside of Capetown in South Africa. Although the country is
usually associated with vineyards and grapes, South Africa actually has
numerous pick-your-own farms scattered throughout the countryside. On
this particular visit a few years ago, our The Taster decided that he
had to have strawberries, and he had to have them right then and there,
(Tea Masters can be an eccentric bunch). His host drove him to the
Polkadraai Farm Stall, known locally for its amazing crop of
strawberries, known as aarbei in Afrikaans. After a day toiling in the
hot South African sun, he naturally asked for something to cool him
down. You can imagine his surprise when instead of something cool, like
lemonade, he was handed a steaming cup of Cederberg district Rooibos
tea. His host informed him that the hot drink would raise his internal
temperature which would in turn lower his external temperature and make
him feel quite comfortable.
The Master Taster discovered that the technique
worked! He also discovered that the mellow flavor of the Rooibos
went particularly well with the bushel of strawberries they had
collected. Soon the gears started to turn and moments later he knew he
had stumbled upon a wonderful idea for a new tea – Strawberry Tingle
Rooibos. Brew yourself a pot and discover what he discovered that day at
the farm – Rooibos and strawberry create a harmonious match that will
truly delight your tastebuds – and, it’s caffeine free! Gesondheid!

Hot tea brewing
method: Bring freshly drawn cold water to a rolling boil.
Place 1 teaspoon of Rooibos for each cup into the teapot. Pour the
boiling water into the pot, cover and let steep for 3-7 minutes. Pour
into your cup; add milk and sugar to taste.
Iced tea brewing
method: (to make 1 liter/quart): Place 6 teaspoons of
Rooibos into a teapot or heat resistant pitcher. Pour 1 1/4 cups of
freshly boiled water over the Rooibos. Steep for 5 minutes. Quarter fill
a serving pitcher with cold water. Pour the Rooibos into the serving
pitcher straining the leaves. Add ice and top-up with cold water.
Garnish and sweeten to taste.
