Origin: Sri Lanka (Blended Black Tea - English Style) Information:  Today the habit of tea drinking is inexorably linked to the British. Ironically the first mention of tea in English literature is a translation of a Dutchman’s travels to the east. Tea was first brought to England via Holland on Dutch ships. Since tea was becoming an ‘in’ beverage the British government became quite incensed that a tiny nation such as the Netherlands would control the shipment of tea to the UK. In 1651 the British government passed the Navigation Acts which forbade the importation of any products on non-British ships. Traders and Dutchmen, being resourceful continued the trade in the usual manner but for one little wrinkle - The tea was transshipped in Holland onto British ships!
Early in British life tea was known as a health beverage and claimed all sorts of curative powers. In the 1650’s, Garway’s Coffee House proclaimed that tea amongst other things:

“Tea makes the body active and lusty. Tea is declared to be the most wholesome; preserving perfect health until extreme Old Age”

Afternoon tea was the invention of Anna, wife of the seventh Duke of Bedford. At that time custom dictated only two planned meals per day: a hearty breakfast and a late evening dinner. Anna in a effort to ease the “sinking feeling” began instructing her servants to prepare tea and cakes in the late afternoon. Thus began a fashionable habit which still exists today.

Origin: Kenya, China, India & Sri Lanka (Blended Black and Green Tea) Information:  Every May the Queen holds a garden party at Buckingham Palace -A lovely English springtime tradition. The Queen invites between 3000 and 4000 guests. Regal cucumber and watercress sandwiches served on white bread, smoked Scottish salmon pate, delicately scented Earl Grey cakes, and most importantly: Tea, are served on this prestigious occasion. You can seen the scene now -the Queen, Prince Philip and the Queen Mother -dressed in formal spring party clothing, mingling with the excited crowd; shaking hands, smiling, stopping briefly to chat with the guests, making eye contact and the royal nod of the head to acknowledge one’s presence for those unable to personally meet the Royal Family.

Each cup is a cup of mystery - the flavors all come to the fore at separate times - one minute you taste the Earl Grey, the next second you can almost feel the soft floral notes of jasmine and finally you get the satisfying fullness of the Assam Ceylon and Kenya blend. Cup Characteristics: A very full bodied cup of tea. The strength and malty flavour of Assams is combined with the brightness and lively flavour of the best Kenya teas. The longer you allow this tea to brew the stronger it becomes. This tea is best enjoyed with milk since the casein in milk renders the tannins in tea insoluble and reduces the characteristic bitterness of strong tea.

Origin: India & Kenya(Blended Black Tea) Information:  Per capita, Irish consumption of tea is amongst the highest in the world. The Irish prefer a full bodied cup of tea that if brewed long enough one could almost stand their spoon upright. The strength is achieved by buying the best teas available from seasonal production periods in Assam and Kenya. This means that the Assam teas are from the second flush period during June, and the Kenyas are from February and August growth. 2nd flush Assams give a deep malty astringency and the best make your mouth feel dry they are so astringent. This astringency leads to a malty character that is almost so thick you feel like you could chew it. The seasonal Kenyas have a golden coppery color with an almost floral note that give a complex depth to the tea. Furthermore, you will see that the grade is CTC - cut, torn curled. The green leaf whilst it is being processed passes through a machine the cuts, tears and then curls the leaves into tiny balls. This ‘mash’ ferments very quickly after which firing takes place to ‘lock-in’ the flavor. These tiny tea balls when infused release their full flavor, more so than whole leaf tea. The reason is that there is more surface area on the tiny balls which can infuse as compared to the whole leaf tea. This is how the Irish like their tea.

Regarding the addition of milk, there is the age old argument of when to add the milk to the cup -before you add the tea or after. Milk-firsters argue that adding milk last scalds the milk noticeably and therefore the milk should be warmed slowly with the addition of tea. Milk-lasters argue that adding milk after the tea has been poured is the only way of judging the proper amount of milk to add by watching the color of the tea change. Non users of milk regard the whole issue as silly..

The average Irishman, when not hoisting a Guinness, imbibes an average of 6 cups a day. Even with the country’s relatively small population of 3.9 million, that’s almost 24 million cups a day!
Tea and Ireland go way back. The drink was first introduced to the country in 1835 by British traders when Ireland was still part of the British Empire. Maintaining a secure supply was never a problem as Ireland relied on British importers for a steady flow of the drink – that is until WWII. During the war, Britain was forced to ration foodstuffs of all kinds, tea included, throughout the Empire. The problem for Irish tea-drinkers arose when part way through the war, much to the consternation of the British government, Ireland declared itself neutral in the global conflict. The British retaliated for what they saw as an act of subversion by cutting their tea ration down to almost nothing. Undaunted, the enterprising Irish government set up its own tea importing company, Tea Importers (Eire) Ltd., and tea drinkers throughout the Emerald Isle rejoiced!

In honor of the tea drinking spirit of the hardy Irish, we’ve developed this good strong blend. The addition of the Assam adds a depth to the tea that is beautifully offset by the addition of cream, another Irish favorite.
