In some parts of India it is said that even if one were to live to be 1000 years old, it would be possible to sample a different chai every day of one’s life. Among India’s more than 1 billion people, although an exact recipe count is impossible, there are literally hundreds of thousands of chai variations from province to province, city to city, town to town, village to village and family to family.
Traditionally this chai would be brewed using milk instead of water. The same effect however, can be created by brewing your tea in the usual fashion and adding warm milk.
