MOLTEN MOCHA LAVA CAKE RecipeFor 6 2- cups flour ¾ cup cocoa powder 5 tsp espresso powder 1 tsp baking powder 8 oz whole butter, melted 1-cup sugar 1-cup brown sugar 4 eggs 1 ½ tsp vanilla extract ¼ tsp almond extract 5 oz chocolate chips Procedure:- Sift dry ingredients; flour, cocoa powder, baking powder & espresso powder together in a mixing bowl, hold for later
- In a separate bowl mix place melted butter then whisk in both sugars
- Into butter & sugar mixture, whisk in eggs, one at a time, then vanilla & almond extract
- Whisk dry ingredients into sugar & egg mixture
- Butter or spray large (6-8oz) soufflé cups with food release, then dust with flour
- Divide mix into 6 soufflé cups and divide chocolate chips & place in center of cake mix
- Cover & chill 1 hour to overnight
- Let cakes stand at room temp 15 minutes before baking
- Bake at 350° about 18 - 22 minutes
- Centers will indent around risen cake
- Fill with warm chocolate ganache (recipe below)
- Serve with whipped cream & powdered sugar
Chocolate Ganache4oz semisweet dark chocolate, chopped fine 2oz Heavy whipping Cream - scald cream in microwave or stovetop till just before it boils
- pour warm cream over finely chopped chocolate in mixing bowl
- mix till smooth, the warm cream should easily incorporate to make a smooth mixture
- can be store din fridge, allow to temper at room tempurature or heat over a double boiler - DO NOT OVERHEAT!
